Looking for some ideas on recipes that are more temperature-forgiving. That is, the house gets upwards of 78 or so during the day and doesn't get much cooler than 74 or so in the evening. I could rig up a very simple evaporative cooling system ... the ~ ≥40% humidity would likely keep things cool enough ... but, if I can avoid it, so much the better. Any ideas/thoughts on fermenting/secondary(ing) at somewhat higher temps like this? Any recipes or yeast strains that are particularly forgiving of higher temps?
