Lets hear some opinions:
I recently brewed a Cream Ale; nothing fancy, pretty standard partial mash, 5 gallon batch. I have a camping trip coming up and I wanted the beer to be ready by then. Accounting for carbonation time in bottle, I would have to bottle it after only two weeks in primary. The batch has reached terminal gravity and has been there for several days, but I always wait AT LEAST 3 weeks before bottling, to give the yeast enough time to clean up the brew (I.E. help hide any technical errors).
So my question is this: Is two weeks enough time sitting before bottling, considering that it will have sat at FG for 7-10 days?
Thanks for any input.
