Vienna Liberty Smash with WY1007

I have never used WY1007 (german ale) before but my LHBS had a pack just sitting there calling my name, so I went for it! Now I am thinking what to make with it and I have some nice whole cone liberty also just begging to be dipped in wort. I am thinking a 10 gallon batch of something resembling a psuedo vienna lager fermented very cool with a straight vienna base and a few simple charges of liberty. I would pitch the yeast at 55 degrees and let rise to 62-64 during fermentation.

11 gallon batch (10 gallon yield)

20 pounds vienna
2 oz liberty at 60
2 oz liberty at 30
mash at 153
WY1007 fermented cool
OG = 1.048
FG = 1.012 (?)


Any suggestions on this one?
 
looks yummy! How many IBUs are you shooting for? Have you considered some late hopping?

I don't have any software available since I am in the office today, but I think between 20-25 IBU would be about right.

I did consider some late hopping, but I am loosely basing this off of a vienna lager and late hopping is typically not a part of that style. However, this is a style all my own, I upped the base malt a bit and the late hops:

21 pounds vienna
2 oz liberty at 60
2 oz liberty at 30
2 oz liberty at 5
mash at 153
WY1007 fermented cool
OG = 1.050
FG = 1.012 (?)


Also, is vienna based off of pale malt or pilsen? Just wondering how long to boil

That yeast isnt good if your trying to base it off a vienna, very fruity.

Vienna you can boil for 60min.

I guess it doesn't need to be vienna lager like, just tasty. I just thought the german ale yeast would be a good match with the vienna malt.

I have the following yeast at my disposal:

WLP001
WLP029
WLP023
WY1007
WY1275
WY1084
Harvested Pacman
Harvested Chimay
Harvested Kellerweis (sierra hefe)

If 1007 is a tad fruity for a smash, i am leaning towards 1084 fermented in the 60 degree range
