So usually when I make a starter I overbuild the necessary amount of yeast cells by 100 billion so that I can use that next time instead of harvesting. Each time I build a starter I start out with the 100 billion that I previously saved from the last batch. When I do this I treat the day that I made the starter as if it was the date of manufacturing and use this to calculate the viability when I go on to make the next starter. Is this a safe way to calculate the viability and cell count? Any one have any experience doing it this way?
