We have a great near smoked porter recipe we use, and would like to do a vanilla porter with this base next tome we brew. How much good quality vanilla extract per gallon would be a reasonable amount?
I was thinking about 1 1/2tsp per gallon. Thoughts?
 
For not too much trouble you can buy a bean, cut it, soak it in 4 oz vodka, and add the vodka. One bean for 5 gallons is typical.
 
I've done a porter with 2 tsp of high quality vanilla extract (into a 5gal batch) at the time of bottling and it wasn't detectable at all. I was afraid of over doing it. I would be nervous about 1.5 tsp/gal, but who knows! Maybe that's the magic number!
