I have a pound of wheat lying around that I would like to throw in my next recipe. I have only ever used flaked wheat and at this point my brewing setup allows for only single infusion mashes.

My question:

If I crush the wheat, add to the grist and use a single infusion mash without a protein rest, will I still get the cloudiness associated with using wheat as well as a bit of added body and head retention? Thanks!!
 
Single infusion is fine. Wheat doesn't necessarily make beer cloudy. If it did, my stupid crystal-clear wit wouldn't be so clear.
 
I mash at 152 on my wheat for an hour and its crystal clear too. That's also using 65% wheat too. So im sure you will be fine.
 
i have mashed at 152 with unmalted wheat (crushed) once. i extended the mash time to 75 minutes, and it turned out great!.
