Hi all,

Can I use a cheap
supermarket wheat for an all grain recipe?
Does all grains have enzyme on them?

For the grains to have the enzymes needed to convert starches to sugars the grain needs to be malted. However, one would seldom use just wheat in a beer recipe and malted barley has sufficient enzymes to convert the starches of other grains up to about half its weight. With that in mind, you could make a beer with half pale malt barley and half unmalted wheat. Be aware that using that much wheat in a conventional mash tun risks having difficulty in draining the tun because the husks form the filter in most beers and wheat has no husk. Using a different filter medium like a brew bag or paint strainer bag will solve this problem by providing the filter with a large area and if it causes problems draining, just lifting the bag will provide new filter area.
