I use a IC to chill my wort w an ice bath. It's great for getting the wort down to 100 degrees F very quick, but it takes forever to get it down to pitching temps. I've read that DMS is greatly reduced if you can just get it below 140 quickly. So to save time and water, couldn't I just get it down to 100-120 quickly, then throw it in my swamp cooler and pitch the yeast the next morning? (I typically brew at night). If so, what are the cons that would come up with doing it this way?
