I just bottled up some white muscadine wine. Because my process was not the greatest, I have almost 2 qt of lees. I have already refrigerated them to squeeze all the wine off the top I could, but I still have a lot leftover. Does anyone know of a good use for them?

I have read about compost, and that is fine, unless there is a better use? What if I bottle them and see what happens? What could be the worst thing, bad tasting wine I pour out later?

Lots of vitamin B, right? dehydrate them a bit, freeze whatever you get from that, and keep it in the freezer for when you get (or are lucid enough to predict that you'll get) a hangover.

I usually just compost mine - and occasionally try to harvest the yeast to reuse (if the ABV was not too high and the yeast was one that my LHBS does not carry) but isn't Marmite and Vegemite made from such lees. I believe the recipe for these products is "secret" but I wonder if it might be possible to make something very similar from such lees... (I grew up in Britain and Marmite is for me something very delicious when spread on bread or toast and I use it in making cooking to provide a savory flavor much like miso).
