US-05 not dropping clear after 11 days (photos)

Hi All-

I commonly brew about 7 gallons and so I split batches into 3-4 gallons per fermenter.

On June 27, 2012, I brewed two batches and split them as I normally do into 3-4 gallons per bucket. I came up one bucket short because I currently only have 3 bucket fermenters. I used my bottling bucket as a makeshift fermenter with a home depot bucket lid and some saran wrap. (it was clean and then sanitized with StarSan, as usual)

Today (July 8, 2012), 11 days ago since brewing all three fermenter buckets had dropped clear.

The batch in the bottling bucket did not. It has been covered with a lose fitting bucket lid and saran wrap.

I racked out from under this slimy layer onto the yeast cake from another bucket just in case. The remaining wort did not taste bad.

The recipe was 100% pilsner malt, 1/2 oz of magnum hops at 60 minutes, and then 4 ounces of Palisade hops in a sack at 10 minutes. Split into two fermenters (mixed back and forth) then each getting one packet of US-05 rehydrated with GoFerm.

It doesn't seem to be infected.... Just wanted to get an opinion on the photos. Thanks!

Was this the last of the three buckets you racked? It's possible that you just got all of the sediment from the bottom of your boil in to that one bucket.
 
No, I mixed the two buckets back and forth several times.

I would think the trub would have been distributed.
 
Extra oxygen seeped through the faucet and did such and such? Sorry, I'm not a scientist...
 
I've had problems with US-05 leaving a krausen after fermentation had seemed to be ending. A gentle swirl of the carboy helps it fall

I have this issue every time I attempt to use 05 without rehydrating.
 
I plan to keg it today or tomorrow.

I just wanted to wait and see why one fermenter would drop clear and the other didn't.

Maybe the temp was too high to encourage it to floc. But they both had the same conditions. (About 75F)
 
So, the beer is on tap and tastes great.

I guess this is just normal for US-05 as a low floculator/ good attenuator.

Best advice, for future reference swirl it (and cold crash if I ever get another chest freezer).

I have few S05 batches that clear well. I like the yeast, but it's a PITA to clear sometimes. I often leave it in a keg for a couple of weeks, near freezing, before I get a totally clear beer.

Dry 05 was my go to yeast for a couple years. I found if I racked it, when it finished, you could actually watch it flock out...the layers were that noticeable. Solid yeast that I'd have no problem using again. I believe it is listed as a medium floc yeast.

i'm drinking a cream ale made with us-05 where i can see the color of my finger through the glass. you're right on this post; cold-crashing is the key
 
I love US-05 for its clean profile at higher temps, but it flocculates horribly. I've learned to live with it though since I only have a swamp cooler.
