Wondering what peeps favorite flavored cider recipe is?

As a newbie gonna be trying cinnamon & cherry.

Thanks in advance...for any feedback...tips...tricks :)

Brian

As for flavors, I usually do that with final sweetening. Pineapple concentrate and Ribena blackcurrant syrup are both really nice.

Also, related is doing a simple apple ale. I add a bit of Malt to the juice (4/1 ratio) and then dry hop for 2-3 days when done. It makes a very nice appley beer blend taste. Still mostly cider, but certainly definitely a different taste to regular cider.

Cinnamon and cherry sounds interesting.

One of the local breweries here uses peaches and cranberries to make a cider and it is delicious.

The Caramel Apple Pie recipe (thread in this forum) really turned out great - had a few try it. I have another 2 gallons almost ready to bottle for the holiday.

I've also been purchasing and tasting many different commercial brands - Maple sweetened is really good. I also just tried the Downeast Pumpkin Blend Cider - this could be my favorite cider ever and I'll be trying to duplicate this soon. Ingredients - fresh pressed apple, pumpkin puree and chai spices - fantastic. (Oh and I do NOT like pumpkin beers).

Lots of options out there to flavor a cider. Personal taste is going to matter. I've been to cider tastings and everyone that went had a different favorite. Oh - pear is really good too! :cask:

My updated flavor plans for my 1st 5gal batch:

Tart cherry

Cinnamon

Tart cherry / Cinnamon

Blueberry

Plain

-- ordered tart cherry & blueberry concentrates

Commercial ciders I like blueberry, sumac, lemon verbena. My own I like cherry, bourbon barrel & peach.

I bought a used bourbon barrel from a small distillery. I store it full of a citric acid, k-meta, spring water solution. First year it took two weeks to get the flavor. Second year a month. After next year I’ll need to re-bourbon it.

just finished a quick 1 gal of cider with a can of cranberry sauce thrown in, plus one stick of cinnamon and two whole cloves. It fermented in about 10 days, and tastes great! Just the right amount of cranberry taste, and just a touch of the spices. Really nice.

After CHRISTmas cans of cranberry should be on sale and I plan to pick up several do a bigger batch that will age for a few months.

What yeast? The cranberry...cinnamon & cloves all in the primary?

I use Nottingham ale yeast for all my ciders. And yes, the spices were added right up front. Half stick of cinnamon and 2 cloves was just right for 1 gal. Both are noticable, but not overpowering.

How's the finish with Nottingham - I've got it on my list to try.
