Well im pretty new to this whole wine making deal. Ok so im sopposed to let my mixture sit for atleast 24 hours because i added a campden tablet to it and all the other additives that this recipe called for, (1 gal. juice concentrate) and i have a napkin over the top right now its still gotta sit for like 10 hours befor i can add the yeast, but i only added the one crushed up tablet because i wasnt sure if i should wait to add the yeast nutrient and the pectin enzyme, because on the pectin enzyme bottle it says to add 1 hour befor fermentation. And as for the yeast nutrient, well i just wasnt sure if the tablet would effect it in some way. Im sure all you expert wine makers had a little laugh over this one lol, but i gotta get the info some how!!:rockin:
 
I have very good directions posted with my welch's recipe, if that helps. It tells what time to add what ingredient, like pectic enzyme. In the Welch's, I add everything together except for the yeast. But the "right" way to do it would be to mix everything up except for the pectic enzyme and yeast, and then add the pectic enzyme after 12 hours, and the yeast 12 hours after that.
