Unitank cold crash co2 tank + spunding pressure

Hi,

I'm currently spunding to natural carbonate beer in my Unitank (15 psi), I'm planning on cold crashing on the following days and I'd like to keep the co2 tank connected to the carbonation stone to reach the desired volumes of carbonation but I'm thinking on releasing pressure first to about 11 psi and set the regulator to 11 psi.

I'm thinking this amount of pressure might stir the beer too much, would this defeat the purpose of cold crashing?
