Hello all. So my wife just got me a northern brewer one gallon extract recipe kit. It's the chinook ipa. It came with what i think is US-05. (which is the yeast that i use most of the time.) I've used S-04, & S-33 as well. I've brewed the chinook ipa before, & it is a good beer. I was thinking about using this yeast that i saw, its called T-58. I've never used this yeast before, but the description that i read about it says that it gives the beer a spicy flavor, & a fruity aroma. Which i was thinking would be good for the chinook, since the chinook has a spicy taste to it. Like i said i've never used this yeast before, & i was wondering if anybody out there could please give me some info on this yeast. Do you think it would be good to use on my chinook ipa?
 
The owner of my local homebrew store did a collaboration saison with a local brewery and I believe this is the yeast he used. It worked great for that. Not sure how it would work in a cleaner beer like an IPA. Might be a fun experiment though!
 
Is this yeast intended just for saison's & Belgian ales?
Based on the description, I believe so but like I said, it still might be a fun experiment especially for only a one gallon batch. It just won't be true to style for an IPA.

****. I must have missed that. Maybe I won't try it out then. The Chinook is a really good beer. I don't want to screw it up.
 
It will definitely be a Belgian ipa. T-58 is my go to for saison, but don't use it if you don't want those flavors.

I like T-58 but it's a peculiar yeast. Don't be misled by the "Belgian" thing - it is phenolic, but only has subtle peppery phenolics rather than full-on saison. In fact it's not at all related to the saisons, it's actually a cousin of Windsor and S-33.

Also IME it's very active in biotransformation - as it happens I put it in a Amarillo/Chinook pale ale in parallel with other yeasts and it clearly biotransformed hop compounds. T-58 reduced the overall intensity of hop flavour by about 20%, but turned the classic grapefruit of Chinook into a more complex, limey flavour.

So it's a matter of taste - I like it, but it might not be the right yeast if you're wanting a pure Chinooky grapefruit flavour.

Oh - and T-58 takes off like a rocket, so be careful with your airlock arrangements.
 
Thanks northern Brewer. That was very informative. I really enjoy the chinooky taste of this IPA. So like you said, it might not be the right yeast strain for this style. I wonder if there is another yeast strain that would work well with this IPA. One that would inhance the Chinook flavor.

Define what you mean by "enhance" - the whole reason that US-05 is so popular is that it is so neutral and stays out of the way of the hops. But honestly, I think T-58 + Chinook is a great combination if you're looking to see what yeast can do - I'd argue the complexity you get makes for a better, more interesting beer than straight US-05, but it's not too different to what you're used to, and it doesn't completely trash the hops like eg WB-06.
