Ok so I made a mead about 10 years ago.....Didn't really like it. I brew quite a bit of beer so thought I would try Mead again. I am a Bee Keeper so have plenty of Honey.
Thinking about trying to make a Lemonade or lemon/lime type Mead. Thought I would make a simple Honey water Mead and just rack to secondary on top of some lemon/lime juice and maybe a little zest. Also have lots of fresh lemons and limes.....Looking for thoughts and ideas.
Thanks
Jack

Check out a recipe known as "skeeter pee" and substitute honey for the sugar. I would amend the recipe if you are using honey and ferment the honey and then add the lemon juice. (I posted a recipe the other day under Mead Recipes - Lemon Bochet, but you can try this without carameilizing the honey.
