Cheers Ratinator! Cracked open my first bottle of this chocolaty elixer. Very, very nice! And after just 9 days of conditioning and 2 days in the fridge, I'm betting it is only going to get better. So, as you know, I changed up your recipe just a bit. Dedicated it to my good buddy Randy who was visiting from Illinois and helped me out on brew day. Here is what I brewed:

IBU (tinseth): 41.55
SRM (morey): 32.97

FERMENTABLES:
8 lb - American - Pale 2-Row (71.1%)
1 lb - American - Chocolate (8.9%)
16 oz - Lactose (Milk Sugar) - (late addition) (8.9%)
8 oz - American - Caramel / Crystal 120L (4.4%)
8 oz - Flaked Oats (4.4%)
4 oz - American - Roasted Barley (2.2%)

HOPS:
0.5 oz - Magnum, Type: Pellet, AA: 12.6, Use: Boil for 60 min, IBU: 23.5
0.5 oz - Magnum, Type: Pellet, AA: 12.6, Use: Boil for 30 min, IBU: 18.06

This sounds like a really good recipe for rotation. Have you tried putting this on oak to mix/balance the sweetness?

I'd like to to add that I normally drink IPAs and do not generally care for sweet beers. Even with a pound of lactose, this beer is not sweet. Chocolaty, yes, but not sweet. Now mine is a little different from OP as I added some roasted barley but with 40 IBUs, it's not too sweet. But if you do oak it, please let us know how it turns out.

Thanks! I am happy with the color. A little darker than yours, but still definitely dark brown, not black. I'll have one during the day this weekend so I can see how it looks in the sunlight.

It was amazing! Though sadly I couldn't find cocoa nibs so it wasn't as chocolatey as I'd've liked, and the next time I'm going to use 1lb of lacose as you said.

I loved it and so did my friends, will definitely brew this again!

Hey guys new here. I'm going to do this as my first not kit brew. I scaled it down to a 1 gallon batch. Any advice?
 
1 gal is so small, are you doing extract or an all grain? The recipe should scale down fine, i know the ribs typcially come in 4oz packages tho.

I recently made a 2.25G batch using the recipe in post #31 in this thread. It tastes amazing and is one of my favorites so far. The only thing is the chocolaty flavor wasn't as strong as I hoped so I think next time I would increase either the cocoa powder or nibs. I also may brew the originally posted version to compare.
 
Feel free to swap some grains around to get the color your going for but i strongly suggest using the same amount of chocolate ingedrients per gallon. You dont want to end up making a chocolate beer that doesnt taste like chocolate and as ive said previously the chocolate flavor is not sweet
 
I'm going to do all grain. Good to know about the chocolate, I was worried that scaling it would dilute the flavor. Thanks !
 
Gonna make this in the next week or so but gonna add 4oz of brewers best peanut butter extra to the keg for a peanut butter cup beer

Gonna scale the chocolate malt to .5lb and add a .5lb of carafa iii

Hey how would you go about trying to make it a sweet chocolate? I’m planning on making an Oreo stout using essentially this recipe but adding the Oreo chocolate in combination with less cocoa powder during boil. Any advice?

You could add more lactose, that would sweet it up or mash higher around 158
 
Brewed this today, mashed at 66°C, as I wasn't sure about mashing neither at 65°C nor 68°C so went for a middle ground and added a couple things of my own to the grist, I will probably add the nibs while fermentation is still going but not at its peak, to avoid any oxidation
 
Brewed this last night, pretty much the same original recipe. I wanted lower IBU so i subbed fuggles and only for the last 15 minutes OG: 1.050. IBU around 24. Looks and smells great. Adding the nibs next week and patiently wait to bottle.

UPDATE/Question...

Added in the nibs, waited 2 weeks. Took a gravity reading and it says 1.026 after 3 weeks in primary. My air temp sits between 55-60 in my brew space. Should I let it go another week or two? I did a one gallon batch as that is what i have the capacity for at this time so I didnt take any gravity readings along the way so I didnt lose too much beer in the process....any help would be appreciated. I used a 1/2 packet of safale05

Gravity should be a bit higher due to the lactose, but that still seems a bit high. Maybe pitch the other half packet
