Hi All,

Anyone have a clone for Trillium Pier Wheat Beer?

Also the best wheat beer on Ratebeer all be it only 10s of reviews until now.

Hops Columbus, Galaxy and Citra. The last two used for dry hopping.
30% Wheat
Plisner, Wheat Malt and wheat flakes.
6.4% (or 6.7%) Alc

Anyone ever drink it?

I guess it uses a neutral ale yeast Chico, Kölsch or American Wheat.

Reviews say a bit more bitter than the norm so probably around 30 to 35 IBUs?

Not must help but as for yeast it has been rumored that Trillium uses WLP007

Interesting an English yeast for a wheat beer.
I could get away with using S-04 as a dry yeast alternative then.

Anyone else with any ideas?

I would say:

67% Pilsner
3% Carapils
15% Wheat Malt
15% Wheat flakes

Columbus 60 min - 25 IBUs
1/2 ounce each of Citra and Galaxy at 10 mins
1/2 ounce each of Citra and Galaxy whirlpool
S-04 Yeast
1/2 ounce each of Citra and Galaxy 7 days dry hop

Again I have never tried this beer so can't tell if that could be the correct amount of hops.
Might just give it a go but aim more for a 5% session beer.
 
I haven't had that particular beer, but have had several of their others. They are pretty open with their recipe info, and provided Brew Your Own with a clone for Fort Point Pale Ale. Trillium goes heavy on the dry hops, like almost an ounce per gallon on the home brew scale heavy. I'd bump up your whirlpool hops too. You could get away with less if you're going more like a session beer, but you'll still need more to be similar to a Trillium beer. Good luck, hope the brew turns out great!

It's likely the best wheat beer I have ever had. I'd think the recipe two posts up will be a great start.

I have 2.5 oz of Citra so I'm willing to "sacrifice" these for this brew ;)
Would be an extra oz compared to the original recipe - 1/2 for the whirlpool and 1/2 for dry hopping.
I have 6 to 7 oz of Galaxy so no limits there.

I'll come up with something in the next few days and probably brew it before the end of the month :rockin:

Maybe I'll send a mail to Trillium before even if they only give me the hop ratios it would be helpful.
They are in Boston so maybe if they know I am from Ireland they might be more forthcoming. :D
 
I just checked out the recipe they gave BYO for their Fort Point beer.
They only used Columbus in the boil for that one.
Also the description for Pier says that Galaxy and Citra are featured in the dry hop.

So I'm going to go with the following:

OG. approx. 1.060
67% Pilsner
3% Carapils
15% Wheat Malt
15% Wheat flakes

Boil for 75 min for the Pilsner malt
Columbus 60 min - 25 IBUs
0.5 ounce of Columbus at 10 mins
1.5 ounces Columbus whirlpool
S-04 Yeast
2.5 ounces each of Citra and Galaxy 10 days dry hop

Over 200g of hops, the max I have used so far is about 100g :drunk:
Still need to put it into a calculator to see if I get 40 to 45 IBUs.
If needed I will then adjust the Columbus additions.

Will have to drink it quick to get maximum enjoyment from all those hops :rockin:

SWMBO gets her work plan for the rest of the month on Sunday so I will see when I can brew it then.

I only have one pack of S-04 but want to brew a brown IPA on the same day using the same yeast so I'll make a starter to have enough yeast for both batches.

62 grams is all the Citra I have.
I would also expect it to finish a bit lower than 1.014 depending on the mash temperature but I'll aim for about 151 F.

So I brewed this yesterday.
Scaled it down to 4 gallons so that I could use equal amounts of Citra and Galaxy in the dry hop.

I had a bit of a nightmare with my efficiency - probably due to a bad crush. So I had to add a pound of light DME.
Hopefully all those hops will hide any un desired extract flavours.
Ended up with an OG of 1.060 so not too bad. :mug:
If everything goes to plan I will add the dry hops next weekend and bottle in 2 weeks. :tank:

So dry hopped it 6 days ago and will bottle it tomorrow.
Was at 1.013 a few days ago which brings it in around 6.2%

Anyone know howmany volumes of C02 I should be aiming for?
Never had this beer but as it's a wheat I guess 2.8 to 3 would be fine.

Bottled it yesterday and it finished at 1.012 so about 6.3% abv.
I also calculated the priming sugar for 2.8 volumes of CO2.

I had some problems with a new auto siphon.
So unfortunately a lot of air came up the tube with the beer into the bottling bucket :mad:
Afterwards I narrowed it down to the seal between the rubber on the cane and the outer tube not being tight enough letting in a lot of air.

I really hope I don't have oxidation issues :(

Anyway I heard it can take a few months before the off flavours from oxidation start to show up and if it turns out good then there's no way it will last that long around here :tank:

And of course a wheat beer should be consumed as fresh as possible :p

Mine is 5 days in the bottle now.
I must say I have brewed 5 to 10 wheat beers so far and this is by far the cloudiest one of the lot.
I poured a bit out of one of my bottles with a swing top cap last night and then resealed. It was only slightly carbed and tastes very bitter and a little fruity. Still very green; maybe my 45 IBU were too much but I tasted a few White IPAs at this stage and they were pretty similar. One week later and they were completely different. Also any reports I read or saw on the internet said it had a bitter kick.
Anyway I will try it again in a week or so and report back. :tank:
 
I used WLP007.

Mine smelled pretty good going into the carboy and is now sitting in the fermentor. But I only ended up with about 4.5 gallons because I had to boil down to preboil gravity. So we'll see what happens.

Also I only ended up with 0.5oz of orange peel so I probably won't get too much out of it, but I could still smell it.

It took me forever to vorlauf and still couldn't get it completely clear so I would expect I will have a pretty cloudy beer as well. But I think I might try and cold crash mine, but haven't done that before so need to read up on it.

Usually I can identify Citra straight away and I added the equivalent of 2.5 oz to the dry hop but it is totally muted until now. Either because of the too high bitterness, or else the Galaxy is overpowering it.
It's the first time I used 5oz in the dry hop so maybe it takes longer for everything to develop than with a "normal" 1 to 2 oz dry hop?

Anyway it's still only 10 days in the bottle so hopefully the bitterness will drop a bit in the next week or two. However if I ever brew this again I think I will also aim for about 35 IBUs. Unless it's tasting amazing within the next two weeks of course :D :tank:

So over one month later and this beer is still too harsh.
Still drinkable but not the best American wheat beer in the world I was aiming for. :p

The main problem is that it is too bitter but there are a also few other things I will change for the next attempt.

Firstly to combat the bitterness I will reduce the amount of Columbus in the boil but I also need to refine my whirl pooling. I did a no chill brew for this so I don't think I waited long enough to add the whirlpool hops and got some extra IBUs. I'll pay more attention to this next time and maybe try to be less lazy and actually use my wort chiller. :(
I might also use Magnum for the 60 min addition to help make it a bit smoother.

Secondly I use BIAB so I'm going to grind the wheat malt as fine as possible this time but also add a bit extra malt to make sure I hit my numbers. Then I won't have to add any malt extract.

Thirdly I'm going to try another yeast; I top cropped some WLP005 British ale yeast from an English IPA I brewed last month so I will go with that.

Finally I repaired my auto siphon so that no air gets sucked in when bottling. As I think I'm starting to get a slightly oxidized flavor but it might be the flavor from the malt extract.

I will probably brew it around the middle of next moth so it will be ready for drinking sometime in June.

I'll report back then with the results. :tank:
 
Almost 4 years later and I still didn't do a rebrew :oops:
I still want to give it another bash using the extra experince I gained over the last 4 years.

For a start I have WLP007 on hand so will use that instead.
My assumption about the whirlpool being too hot resulting in increased bitterness has proven to be correct so I'll be cooling it down to just under 80oC to avoid that. I have a 20 gallon kettle now too so will do a split batch and dry hop the other half with 3 oz Mandarina Bavaria and 2oz El Dorado.
Not sure yet if I will use the same yeast or something different.

The only issue is that I only have 2 lbs of wheat flakes and don't want to have to make an online order just for that.
I do have a few pounds of Torrified wheat and some wheat berries so might add one of those instead.
The berries would be closer but are a pain to grind. :confused:

First up is a Barleywine and Pale Ale in a few weeks but I should be able to report back on this by the end of April. :drunk:
I'll also do a bit of snooping around on the internet including their website to see if any additional information has become available since I last brewed it.
