None of my TC connections have threads, they all clamp together with a gasket inbetween the mating surfaces.

You need these:
https://www.brewershardware.com/Sanitary-Fittings/Tri-Clover-Caps
be sure to get the gasket and clamp as well.

If you look at the picture I took last weekend visiting a German brewery you can see the same cap attached to a TC valve. Wouldn't that indicate it's possible?

Agree, it is a DIN/RJT screw type sanitary fitting. Definately will not fit a Triclover fitting. In the case of your photo that is not a Triclover valve
