The first time I brewed, I used a tall and skinny 6 gallon SS pot that fit well in a regular cooler. When I went to cool the wort, I just filled a cooler with ice water and set it inside. It worked really well and cooled rather quickly. I have sinced purchaced an 8 gallon aluminum stock pot for boiling. The problem is, the pot is much wider and will not fit in a cooler. So, my question is, Could I boil in the aluminum pot and transfer it to the SS pot to cool or is there to much risk for oxidation?

I may be incorrect, but I think you might risk oxidation if you splash a hot wort too much - maybe transfer carefully and slowly to prevent splashing. Palmer's book warns of hot wort oxidation.

That is correct... if it is hot the oxygen can mend itself to compounds in the worth. So a gentle transfer would be a good idea. When he said transfer, I took it as a nice smooth transfer. Thinking about it, I am not sure how you can transfer hot wort. Maybe its not such a good idea. Thanks birvine, that slipped my mind.

If you are worried about hot-side aeration, then the simple solution is to transfer it to the other pot via siphon rather than just dumping it.
