Hi All,

I'm thinking of moving my hard cider over to its secondary container but after taking a sample it hasn't reached 1.000 gravity. The activity in the air lock had slowed down a lot but started going again when I moved the carboy to my counter so I could transfer it the next day. The starting gravity was 1.680 and the last reading had it at 1.060. I am wondering if its fine to transfer to secondary before it reached 1.000? The sample I tasted was actually quite good consider it hasn't had time to age yet. Thanks for the advice!

I did one of mine at 1.020 to get it off of the lees and start adding some additional flavors with no problems. I plan stopping it right at 1.000, back sweetening, bottle carbing then stove top pasteurization.

I’m just guessing you meant 1.068 & 1.006

If so that’s fine. I usually rack when it drops below 1.010
