almost two weeks ago i bottled my stouts. i had 2 large screw top bottles that i was going to bring to work for a beer tasting-... i had immediately stuck the 2 bottles in the beer fridge-...

is this going to lead to flat beer as the yeast may go dormant?

if so, is there any hope in removing them from the fridge to reactivate carbonation?

is it going to result in an off flavor?

is it going to make that big of a differance?

thanks in advance!

It may be carbed fully and may not be. Ive never had a problem drinking a beer 2 wks carbed but alot of times i know its not fully carbed or conditioned yet.Alot of times im pretty impressed at a few wks also.I think 3-5 wks is a standard usually. But i think they are more fully conditoned around 4-6 wks. A good standard for me is 8 wks from making it to a finished conditoned bottle. Not that it hasnt been any good inbetween that.

was this 2-3 weeks in the fridge from day of bottling?

thanks for the quick reply!!!

No, you need to leave them about 70 degrees for 2-3 wks (or more) after bottling. If you put them in the fridge immediately then they most likely are flat. Warm them up then swirl them around to resuspend the yeast.

i took the 2 bottles out of the fridge last night-... i pinched the sides of the plastic bottle today and it seemed very stiff-... i gave them a good shake to resuspend any yeast. i'll likely save these 2 for last.
