So, I realized the other day that I primed my keg of ale with 5oz of priming sugar. When I went back and looked at Beersmith, it said only 2oz. Whoops! Big brain fart mixed with a few homebrews. So, if I were to let this sit for two weeks and then cold crash, would it be at a good carb level or should I wait it out?

Well you could always put it into your kegerator sooner than later to make the yeast go dormant.

A couple ideas:

- use a spunding valve to let the pressure rise and vent any extra CO2 produced
- vent the gas occasionally so it attenuates down without leaving it sweet

You can always force carb it later.

Hmmmm. I didnt think about the sweetness of it. I guess I could always pop the top, taste it, and then put the lid back on. If its too sweet, then I would let it attenuate out.
