Hey guys,

Brewing a Marzen with an OG of 1.054 tomorrow. I forgot to make up my starter yesterday and wouldn't be able to get it going until tonight which would give the starter less than 12 hours. I'm assuming that is not enough time to get a decent amount of fermentation going. So would you guys double pitch or would the starter create enough good yeast if I did it tonight?

Thanks!

This method will work well.

Make a Shaken Not Stirred starter. Use the calculator to determine the size based on yeast viability.

Pitch the starter at high krausen in 12 to 18 hours. Or as close as possible to high krausen depending on when you have an aerated wort in the fermentor.
Ideally starter container should be 4 times the size of the starter volume. Shake the starter wort until it is almost all foam then pitch yeast.

More info on the SNS starter here.
