Well I got motivated today looking at the apples across the street. The trees have not been trimmed for years and the owner will not so I decided to. He is also my landlord, and I have free roam of the property since I mow it for him. I also have a 50 x 50 garden over there.:D It effectively gives me 2 acres of land to use instead of a small lot. Well back to the apple trees. I picked about 5 bushels today and expect to get at least 7 or 8 more. So I figure I would press 5 gallons for a batch of hard cider and then finish with a bunch of pies to freeze and some apple butter. I have everything to do the pies and apple butter but the press I had to make this afternoon. I got a bucket and wrapped it with zip ties and made it leak. I then built a plunger out of some oak I had laying around and built a press with some old 2x6 boards I had in my pile. I will be using my bottle jack to apply pressure. I will be running to the LHBS in Burlington WA first thing in the morning while my middle kids is in therapy and then we will commence to have fun. To break the apples down before I press them I will put them in my food processor then toss them in the press. What yeast would you recommend for a not to dry hard cider?

I use Nottingham in all of my cider, it quits around 9 abv. SG >1.072 1 1/2 lb of table sugar plus 1 1/2 lb corn sugar, no back sweeting.

Well I went with your advice and it has been pitched at this time. I have it in a cool bath and my temps are about 68. It took me about a bushel and a half to get 6 gallons of juice. I have 5 for my hard cider and 1 for my kids to drink and have fun with. Breakfast tomorrow will be pancakes and warm apple cider with cinnamon in it.
 
Stubborn yeast I tell you. I have my cider fermenting but I have to go wake it up every few days with a good shake then it goes like mad for a bit then seems to take a nap again. My temps are sitting at just about 65/66
