To be 100% honest, i have no experiance at all with biab, but @afro_lou uses that method as shown above, so perhaps he can chime in to assist on that.

This looks and sounds pretty good! I've been trying to get away from hops (been drinking more IPAs than water for like the last 6 years :/ ) but I need a good NEIPA on tap to offset my winter brews and could definitely use a fast turnaround beer to get me to stop buying beer again! Any pics of the finished product?

I've never done the 'roll/shake' carb method and am a little apprehensive. Have you ever had an issue with over-carbing using the method you described above? Thanks in advance and cheers!
As you can see from my pics , no issues just don’t let it sit at 35psi too long after rolling
Thanks for posting, haven't tried a NEIPA yet, I like your method, I'm going to brew it and substitute oat malt for the flaked oats.

Did you brew it?
 
If I were to brew this in a biab method what would be the difference in salt additions assuming I start with 8 gallons of ro water? Would I just add all the salts added up into the mash?

I had very different mineral additions than @Redtab78 did, but luckily he included the PPMs of his target water. My batch was 11 gallons, BIAB, so I ended up with 17.79g CaCl, 5.94g Epsom Salt, 5.31g Gypsum, 4.67g Salt (I used non-iodized sea salt), 0.06g Baking Soda (tough measurement, so I just sprinkled a bit in there) for my 17.25 gallons of RO starting water. These obviously won’t be the same as your additions, but just a baseline for comparison. If you have Bru’n’Water, BeerSmith (or most any brewing software) you should be able to punch in the total water amount and desired water profile and it’ll tell you exactly how much of each to add.

A quick scaling of my BIAB version of the recipe with 8 gallons of RO shows additions of:
8.09g CaCl
2.70g Epsom Salt
2.41g Gypsum
2.12g Salt
0.03g Baking Soda
YMMV, though, so double check with your equipment profile if possible.
 
I need to do 10 gallon batches... my keg only lasted 2 days..I just went and checked to make sure it wasn’t a dream and sure enough it’s kicked

Guess the porter I had planned will wait and I’ll be busy today again

So I guess that’s the bad thing about this beer....there isn’t enough of it
 
This looks really good. My schedule is set for the next couple of weeks but after that I'm doing this one. I have a pound of azacca and was trying to think of something to do with it. Perfect! Thanks for sharing!

@afro_lou thanks much buddy!! I purchased bru'n'water excel sheet (just have not sat down and figured out how to properly use it yet).

To be honest, I’ve had the sheet for years, but haven’t been able to get it working recently using Pages in MacOS... BeerSmith has been doing the trick, though.

How do you like that krausen catcher set-up? Do you think that it stores more volume of CO2 than what gets sucked back during crashing? Currently when I crash I just use a 3-piece airlock that after I'm sure some oxygen ingress the cap sucks down over the top and creates a vacuum in my ss brewbucket until I pop the lid and then really only then is it exposed to much oxygen (I know, I know...don't need a LODO rundown but it's the best I can do right now).

Long story short, thinking about asking for one for Christmas...worth it in your experience?

;)that was 6 people drinking on it over a dart board game or 4 on the first day, and a big bbq on the second :) the good news is tho I have yet another identical batch in the fermenter already, so by next Sunday I will be ready for another 4 day weekend!!

absolutly, for not all of my beers suck back the same as others, but having the 1/2 gal volume, I have 100% piece of mind knowing I have nothing to worry about :)

I couldn't get it to work worth a damn with Pages or Numbers, too. But it works great with Excel for OSX. I guess that's the catch...Pages and Numbers just isn't compatible enough.

Numbers! I meant Numbers... damn though, I was hoping I wouldn’t have to buy another program to make that spreadsheet work...
 
One more question before I attempt this: this is quite the hefty brew clocking in at almost 8%. What does such a high ABV bring to the table? I'd prefer it at around mid 6% max.

I just happen to enjoy this style between 7-8% ....USUALLY on a given weekday i can have just one and really enjoy the flavor and be done, i dont make these to have 3-4 a day..... i have certaintly made some at 6-7% and even one at around 5.5, but then they just go too smooth and next thing i know i have had 5 or 6 and my keg empties too fast that way. So for me the higher % limits how much i drink of them......although, as i mentioned, the last keg lasted 2 days....so my plan doesnt always work..

You can back off the base malt to 10# and put you in the neighborhood of where you want to be easily and just keep everything else the same, and you will enjoy it just as much.
 
@Redtab78 your recipe looks really nice, I like your choice of hops and that you used constraint in your hops usage. Excellent job in recipe write-up as well.

I brew most of my beers in the 5 to 6% range so I tweaked your recipe to get the ABV to the bottom of the IPA range(5.5%). A few minor changes to the hops, warrior instead of magnum and dropped the IBUs a little to make up for the lower ABV and dropped the galaxy whirlpool hop to 1oz so I can get a second beer from my 4oz package. Used wheat instead of the oats.

Just finished kegging it!!! Not at all fully carb’d, but had to take a pull to test it out. Loving it so far!

So, in response to the other questions about scaling down, I ended up adjusting my grain bill in BeerSmith to drop the OG to 1.065, and I ended up hitting 1.063 as my actual OG. FG landed at 1.010, so that puts it at 7%, which is just fine for me.

Below is what I used, but I missed your post that the FWH IBUs was only 37. I entered your grain bill into BS and the default magnum AA gave me 47IBU so I went lower than that not your 37IBUs. I think in order to keep the bitterness impression the same my FWH should of been something like 30IBUs.

5.2gal into the fermentor
1054 Starting Gravity
1012 Final Gravity
5.5%ABV
mash 150F

9lb GW pale ale malt
1lb white wheat malt
8oz honey malt
21gm warrior FWH 15AA 42.3IBU
28gm galaxy flameout 16.7AA
28gm galaxy whirlpool 16.7AA 160F 20min
28gm mosaic whirlpool 12.4AA 160F 20min

Dry hop per the original recipe

I dropped the carapils and doubled up the honey malt as I figured the wheat should not need help with head retention.
 
It was amazing! I am not a bitter beer fan...this had a great aroma and an even better flavor. Took all I had to not drink more.

Beer was awesome, one of the best beers I have ever tasted, can't wait to try this one thanks Red, can't wait to see what you got coming next.
 
This is my single IPA version. I ended up dry hopping 36hours post pitch using 2oz of each citra, mosaic and azacca, crashed 7days post pitch and kegged day 8. I kegged the beer two days again and wanted to give a quick try. During fermentation I got a nice mix of citrus and pineapple, seems a bit more citrus now and there is also a bit of hop bite, I will give it a week and try it again.

Actually waiting for another keg to kick before putting it on tap, but I did pour another couple pints to see how it is coming long. I am liking it so far but because I over did the bittering charge a touch it may take another week or so to get the right balance. The aroma and flavor is citra dominant, getting lots of grapefruit with a spiciness on the finish. The beer has a pretty creamy texture and leaves some lacing. Thinking a little time should get the pineapple to come back too.
 
Boiling my second batch of this as I type! Cut the grains back even more from my first batch to hit more of a light single ipa range. Shooting for 1.055 og. Kept the full volume of hops, though! Can’t imagine going wrong with that. If it’s half as good as the first one, I’ll still be thrilled!
Thanks again for posting the recipe, @Redtab78, this is definitely in the main circulation now. Hopefully my LHBS will get some Galaxy one of these days! No complaints about it being Citra-heavy, though. [emoji16]
