Does stirring during boiling cause oxidation(cardboard flavors?)

Is there better ways to mix up the hops and get their reminiscent from the hot break off the side of the pot?

No, the oxidation that you are referring to happens when oxygen is introduced after fermentation due to sloppy racking or excessive splashing in the bottling bucket - not during the boil.

As far as keeping the hops in the boil and not beached on the sides, wait for the hot break to pass before adding your bittering addition.
 
I just transferred a pale ale to secondary and noted some off flavors. Its kinda hard for me to place, but some where between cardboard and banana bread. I'm hoping it will die off once the beer is aged

Sounds like your fermentation temperature was a little on the high side. You wouldn't notice oxidation this soon.
 
Stirring only hurts you during the boil when you stir counter clockwise. The brewing gods clearly stated in the 11th commandment that was broken by Mel Brooks, "Ye who stir the boil in an anti clockwise rotation whilst making of the beer, shall be smote by God!"

Unless you live in the southern hemisphere then its counter clockwise......
