to late hop or not to late hop

one of the members here suggested I do a late hop addition on a foreign extra stout that Im planning. After a little research it seems this is not in keeping with the style... however, if its good, I dont really care.


question:
has anyone done this?

question 2:
how did it turn out?

question 3:

hop schedule at this point is:

1.0oz northern brewer x60 min
2.0oz fuggle x40 min
1.0oz northern brewer x30min

what suggestions do y'all have?
 
unless the beer is going to a competition dont worry about it.

if its for the pure enjoyment of drinking homebrew i'd throw some in. :mug:
 
I suggest you follow my one hard and fast rule of home brewing:

"It's your own damn beer so do whatever the hell you want and f*** anyone who says otherwise!"

p.s. if everyone brewed to style then we'd never have a cascadian dark ale/black ipa/whatever the hell you want to call it, and a bunch of other great tasting beers.

when it comes to things like this, my biggest problem is deciding on what to tell beersmith that the style is. lol

Just go with whatever is the closest, then adjust outside style guidelines on the things you want to change. So, you could choose IPA and then set up the recipe to make it darker and roastier.
 
i'm not really sure what the problem is if it's to your taste. i doubt 2/3 of my beers are exactly a specific style. the main style they meet is they taste good to me

I was really only including the style statement fo reference.. I mean, styles exist for a reason right... because they are sucessfull and generally taste good.

so, I guess the better/more appropriate question is:

has anyone tried an "out of style" late hop addition to a foreign extra stout?
how did it turn out?


note: I was reading designing great beers last night (its become my latest before bed ritual :D), and it seems several brewers (both commercial and HB) successfully use a late hop addition in this style (at 15 min)...

Well, in my opinion, a 30 minute addition is NOT a late hop addition. That's still a bittering addition. If you want a "late hop" addition, flavor hops are usually added at 20-15 minutes, and aroma hops at 5-0 minutes. You may get some flavor out of a 30 minute addition, but generally not. It's generally still a bittering addition.

right.. Im asking about adding a 15 min addition to the schedule in the OP.
 
That is the first time I heard of flavour hopping in addition to bitter and aroma. What's this new classification?

Also, I am planning on brewing a stout this weekend and was just thinking abotu if there is a real point to a late hop for aroma when the stout is going to be bursting with flavours already... personally I am going to drop my last hops in at 20 min and then focua on malt flavours. Next time i Try it maybe do an aroma hop addition. But there is a likely possibility that while I stand there with 5 min left and that bag of hops is in reach it may find itself swimming.
