I just got done doing up a nut brown & it's in the aging/carb stage. It would be going into the fridge for consumption on Wednesday. Now i am leaving tomorrow & won't be back till January. So should i put it in the fridge or leave it out at room temp until i get home. It does have a Co2 charge on the keg, around 30psi. Any info would be very helpful. Thanks
 
Put it in the fridge - it'll essentially get lagered that way instead of aging warm, which tends to change the flavor more quickly.
