tips for painting brewstand

Recently purchased a weldless "wallace" style single tier brewstand. Im looking to sand a paint with high heat engine paint. Anyone have any advice for making this as painless as possible? Tools are limited, i have an orbital sand, dremel, and two hands. Should I just use sheets of sandpaper and do it by hand? What grit? Once its sanded do i need to prime? Thanks in advance!

Hell I just used high temp matte black bbq grill paint. Rattle canned a few coats and called it good.. touch up is easy.. its pretty tough stuff and looks great..
