Was wondering about a multi step mash in BIAB. I read about the different rest temperatures for different times, but how do I count the time it takes getting from one temperature to the next get counted? I am on a 30000 btu burner so it will probably be 10 - 15ish minutes to get from one temp to the next. Should I reduce time off the first temp, add to the second temp, or don't count it in either time frame (increasing the overall mash time)?
