This is what I've come up with:

7 lbs Pale Malt, Maris Otter (3.0 SRM) Grain 1 63.6 %
2 lbs Pilsner (2 Row) Ger (2.0 SRM) Grain 2 18.2 %
8.0 oz Caramel/Crystal Malt - 60L (60.0 SRM) Grain 3 4.5 %
8.0 oz White Wheat Malt (2.4 SRM) Grain 4 4.5 %
8.0 oz Candi Sugar, Clear (0.5 SRM) Sugar 5 4.5 %
8.0 oz Honey (1.0 SRM) Sugar 6 4.5 %
0.25 oz Columbus (Tomahawk) [14.00 %] - Boil 60. Hop 7 11.7 IBUs
0.25 oz Centennial [10.00 %] - Boil 30.0 min Hop 8 6.4 IBUs
0.25 oz Centennial [10.00 %] - Boil 5.0 min Hop 9 1.7 IBUs
1.00 tsp Grapefruit Peel (Boil 5.0 mins) Spice 10 -
1.0 pkg Safale American (DCL/Fermentis #US-05) Yeast 11 -

Any thoughts, comments concerns, changes?
 
Made it before. It's tasty. I'm actually about to brew this next and looking for the best way to dry out my grapefruit peel. I may actually put it into a secondary tank instead of the boil, as I thought the boil may not have given it enough grapefruit flavor.
