Thermowell or thermometer?

Should I weld a thermowell in or a thermometer? I make and weld thermowells in fermenters all the time but those are for craft breweries from 5-200bbl so I'm not sure what to do

Depends on what you want. I have a thermowell on all my kettles; but, wish I had a TC port instead as using the Auber TC RTD's would be better. As long as what you put in allows for easy maintenance though, that is what is important as eventually your temp probe, whatever type you choose, will likely need to be replaced.
