I've been reading all of the threads about the different types of thermometers and how to water proof them for the ones with a wire.
I saw someone mention that they have used heat shrink tubing on it and I was wondering where they got that from? And also wanted to know if it affected the taste of the beer.

I do like the oven style thermometers due to the fact you can set a temp and it alarms you when it's reached and also that most of them have a timer...

Do they make waterproof probes that won't break the bank?

Heat shrink tubing is used on electrical connections, you can find it at radio shack or in the electrical department of most hardware stores.

Would this particular tubing effect the taste of your beer?

The tubing at RadioShack will not work bc the shrink temp is only 158 degrees F. It needs I be much higher than that around 250. Which is what the food grade tubing is on adafruit.com that someone mentioned earlier
