Hey!? Did we just hit 1000 in less time than the Blichmann contest? Me thinks yes. And this thread doesn't win anything. Hmmm.
 
I don't use bottled water or refill from the sink....sort of. What I do is use a Zero Water filter to refill all of my gallon jugs. Then I add calcium, gypsum, etc.

So you start with a clean slate and then build the profile? Although I brew quickly and cut corners every which way but loose, the majority of beer is water. The better the water the better the beer. Friend of mine who brews these fantastic beers. When talking about water mentioned that his water comes from a well that is fed from a glacier. Denver is pretty cool there is a Homebrew page and they give you the water profile. I just started using Camden. I brew drink and brew again so not too much adjusting here. But I'm certainly willing to consider anything
 
A clean slate? Maybe no. I filter my tap water with a Zero Water filter. It takes out all of the solids for sure. I back fill with Gypsum and CaCl. I'm still playing with things. Nothing too serious as of yet.
 
I would like to brew with some of that Conan yeast, Vermont yeast whatever its called. I think that's what's in there.
