Usually don't care for CS these days but found this hiding on the shelf today while picking up adjunct stouts. Absolutely a gem. Vibrant lemon and lime with a hint of brett funk and a mild acidity. I'm going back to buy the rest.

Vieille is my favorite regular offering from them. I need to see if I can find the double dry hop.
 
In honor of their stand today, I popped this one. Fine beer. Earthy, light phenolics, tart, bit of green apple and lemon, with a good hint of the malt character. I like to check in on this one every now and then.

Should be going into barrels soon. I'm afraid 207 is dead. I tried to revive it but no luck. 184 may be the best smelling brett I've ever worked with. Lots of lemon-lime, bit of pear, and a little tartness. Looking forward to seeing how it does with a new Saison strain I'm testing/working with.
 
09/2016 bottle. I was way excited to find a non dusty under one year old bottle of Bons Voeux. After pulling the cork it start to gush; off to a good start. Peppery yeast, some citrus, banana laffy taffy and bubblegum with an earthy finish. Effervescent and drying, hefty but very drinkable. CRUSH. Would still like to try a DuPont beer fresh to see how hoppy they are up front.

Vieille, Surette, and those wit beers are all still my favorites. I've found that they age phenomenally. Their pricey acidic sours are good too but why splurge on that when the above are such a steal?

If you ask me (and why would you?) I would say that Bons Voeux is the most underrated beer in the universe.

I recently found out these come in 375 bottles. I wish I understood more about how beer distribution works so I could get a case of it locally. Would drink on the reg.

If you have a go-to store and you are acquainted with the manager then you should just ask that person to order you an extra case next time they get some from the distributer. I do it all the time (With other beers). Most places will even give you a discount and if you are friends with them you may even get the case at cost w/o markups.

I've tried but I think it's something where they unfortunately don't get sent to our state.
 
Cheers to Thorpe429 man. Thanks for sharing this. You can pick up on all the Arthur influence. Spritzy lemon lime. Super clean and refreshing body. Galaxy hops come out as it warms with a starting tropical note. Finish gives just a hint of citrus-like zip/tartness. I'd take a bit more carb but that's just how I am. Not too many doing this here in the Midwest. Good luck to you sir as you embark on your adventure. I hope many more are like this. Fantastic stuff.

Thanks! I'll still have some posts up from time to time, especially on process, goals, etc. Probably just fewer recipes since nearly all that I'm brewing is based on the beers I've done in the past.

Good news! The 207 is now WOKE AF. They'll both be in the barrel soon.
 
A few recent saisons:

Shade Oak Alpha Cure

Described as a session tart farmhouse ale aged in chardonnay barrels with brettanomyces.

Notes: Lemon and mild tropical fruit up front. Hint of oak, full body, dry finish with a bit of acidity. Slightly chalky. Faintly metallic.

Propolis Gardin 2016

Notes: Nice red wine presence with a backing earthiness. Dry with just a touch of acidity.

Really surprised that this brewery doesn't get more love. Really innovative beers using a bunch of fun ingredients. My only complaint is that I wish the ABV of their beers was generally a bit lower.
