Ahh my fermentatoin temps for my Bev. Hefe are all over the place. My fermometer has read anywhere from 62f to 72f. I just got a fridge regulator and my next batch I'll ferment in there. But for this brew what will be the consequences of the fermentation temps varying day to day so much?

It could have a high phenolic presence. Banana, clove, bubblegum flavors. Also, if fermented too high a beer can have a hot alcohol flavor. However, I think you'll probably make a good beer with those temps. On the 62 side will make a better beer than the 72 side. If your temps are all wonky like that you probably wont make a great beer but it'll still be good I'd say.
