We are getting into the hot days of Texas. If anything like last year, my house cannot keep down to 77 degrees at times. I need a used cold box or stop brewing until fall?

It'll probably be tough to find a yeast that'll do well that warm.

I'm fortunate to have an extra fridge in my garage. I've had fair success using that with a $7 outlet timer to keep temperatures below 70. It's hard to hold an exact temperature this way, but the results seem pretty good.

Best bet is to get a cheap fridge or freezer off Craigslist and a cheap STC-1000 off ebay. I don't think the heat in TX will allow for a swamp cooler method.

About the only options (sort of actually buying some sort of a temp control solution) are Belgian yeasts or saison yeasts that thrive in the heat.

I brewed a really nice saison last summer with WLP565. Started ferment (as I always do) with wort chilled into the 60's, but then ramped the temp all the way up to 86 degrees and kept it there for 3 weeks. The result was *really* tasty.

I've been looking for a cheap fridge. I have a chest freezer that would be perfect if I could control the temp above freezing? Any ideas??

$24.00 free shipping. Thanks! Being delivered on the 16th. Too bad it won't control the temp outside. An A/C in the garage an life will be good for the summer.
