I am brewing a peach brett. The base beer is a saison using wyeast french saison yeast. I have had that in primary for a week. In another week I will move to secondary, add peaches and pitch the brett yeast.

During primary I am keeping the beer in my bedroom with a window air conditioner to keep the beer at 70 degrees. I left for the weekend and when I came back the vent for the portable air conditioning unit had fallen out of the window and was blowing the exhaust into the room. The room was at 98 degrees, likely about that for an entire day.

My question is, is the beer toast? I assume I killed off the yeast, but since I am pitching yeast twice, could this help to salvage the beer, or will it just be full of off flavors?

man at 98 Iwould consider it a complete loss if I had a extra bucket I might see how it taste i n 3 or 4 weeks but otherwise it is time to brew again

I wouldn't say it's toast. Saison yeast does better at higher temps, 98 is extremely high even for a saison but it still could've withstood it. Just wait it out for now

It's not lost. 98 won't kill yeast, or at least shouldn't. Saison yeast typically loves heat, though I've never used that particular strain. 98 might be a bit high, but I accidentally pushed Dupont yeast over 100 once. It was strange for the first couple of months, but then got quite nice, actually.

Taste it, and as long as it's not totally objectionable proceed as planned.

Thank you. It actually likely didn't get all the way up to 98. I keep a digital thermometer on top of the bucket and after posting I went into the room and it said 92 degrees (the 98 came from the thermometer on the AC unit). Also, the bucket had a sleeping bag wrapped around it so it likely was a little cooler than the room.

Thanks for the advice, hope it still turns out well.

You should be fine. Any yeast but. a saison yeast and the results would be rocket fuel, but saison yeasts are the only yeasts that can handle that kind of temps.

You are good.
