Temp control problem with new fermentation room

This winter I built a 15 sqft fermentation room in my garage. Last week I installed a 5000 btu window a/c on the side wall. I previously used this room through the winter with great success. I'm using an Aubrins PID with an RTD temp probe mounted in my conical fermenter. My closet has been working great all week and has kept my conical at 67 degrees perfectly. This morning however the temp read 73 degrees and the a/c was runnning. I checked my stick-on thermometer and it read 63 degrees and after opening and closing the fermentation room door the PID jumped down to 58 degrees suddenly. I've noticed the PID jumping rapidly in either direction when opening the ferm room door. Anyone have any idea's on this? We've also been hit with two big storms this week and have lost power multiple times.
 
so, you are looking for the connection between the door and the temperature probe? there should be none. The only thing I can think of is that there is an electrical issue related to turning on the light (not specifically opening the door).... Also, opening the door and walking in may cause sufficient vibration to expose a flaw in the probe orientation / connection... or sufficient pressure change to move something. check all connections.

The only time my PID ever jumped like that was due to an eddy in the liquid flow (RIMS tube).
