The guy at the LHBS convinced me to try a clone of Rapier Wit to cut my teeth. It had been bottle conditioning for two weeks when I put a couple in the fridge. I just opened one today after work (3 days @ 38°) and I'm not sure if it's just pride but this is a pretty good beer.
It's not carbed enough, but that problem will take care of itself if I can learn a little patience.
It tastes light. Not the body or the ABV, but almost the same way champagne tastes light. I've never tasted a beer that did that, at least not to this extent. Is that just because the beer is carbed enough for me to notice but not enough for that sensation to be masked?
Either way I'm hooked. I should have started this years ago.
