hey everyone on the forum i need so help so like always i turn to all the wonderful people here. I wanted to brew an ipa with a hint of grapefruit. It is still in the primary and today i took a gravity reading and of course i tasted it to check out how it was going to turn out and it has good flavor, but it hard a semi hard bitter after taste. i plan to transfer to secondary and add one peeled grapefruit and then bottle a week later. i wanted to know if this is normal and is there anyway i could get rid of after taste? a little about the recipe i used is

1oz horizon at 60
1oz centennial 10 min
1oz simcoe 5min
1oz amarillo 0 min


yeast: white labs WLP001

This is normal, the beer isn't cleaned up yet and still has awhile to go. It should mellow with time.
 
You want to add the grapefruit, or the peel?

I wouldn't add either. I don't think citrus ferments well, and the pith leaves a bitter taste.

Just use the zest. You will get more flavor from it if you steep it in vodka for a week, then add the vodka to the beer. The higher alcohols in the vodka extract more of the oils from the zest.
 
well i wasn't sure how to get the flavor so i thought i would just add a grapefruit. But didn't know citrus ferments well. ill have to try the zest and see how it goes. thanks for the advise!
 
don't bother man. cascade hops will give you grape fruit. rack the beer off into another fermenter leaving the yeast behind and add another packet of cascade to it. package it in 4-7 days.
 
I too think you'll get better results from adding cascade hops, but it's your beer. As mentioned adding the fruit of haircut and grapefruit zest will give different results.
 
Cascade or CTZ (Columbus/Tomahawk/Zeus) will both give you the grapefruit taste you are after. Dry hop with an ounce of both or 2 ounces of one of them. No need to transfer to secondary either. Just add them gently to your primary and rack for bottling in 7 days.

That^ don't add on fruit. Did you do an all grain batch? What temp did you mash at?
