Hi everybody,
I'm going to be brewing a hybrid ale that calls for 1,5 lbs rice syrup. In my area it's a bit hard to find this (don't ask :) ), so I've read on then intertubes that using table sugar is viable substitution. My question is: Is the conversion rate 1-to-1? i.e., can I just use 1.5 lbs table sugar instead? I'm a bit curious since the rice syrup is a liquid, so I'm not sure if the conversion is that straight forward...

thanks in advance!

Dennis

Not even close to the same as far as sugar content. Rice syrup has a sugar content of 1.032 per pound per gallon, and table sugar is 1.046.

Ok, thanks for that info. :)

So this would appear to my fuzzy eyes that table sugar then has nearly 47% more sugar than corn syrup...so just multiply the corn syrup amount by that amount to get the amount of table sugar needed...er...right? :)

Correct, or just to make it easy 1.5:1. Be warned though, sugar is not a straight substitute for rice extract syrup by any means. They both will ferment out to alcohol but that's where the similarities end. Rice syrup provides color and unfermentables and is more complex than table sugar. Table sugar fermented on it's own will give you rocket fuel.
