For the last 4 months, I've had this idea bouncing around in my head for a earthy, rustic IPA; (Slightly) inspired by Rudyard Kipling's poem. In my mind's eye it is a English IPA with a twist - adding rauchmalt. I've formulated this recipe, and would appreciate feedback:
Swig from Gungadin
9lb Marris Otter
3lb Rauchmalt
1lb Crystal 60
1lb Victory
1oz Target (60)
1oz EKG (45)
1.5oz EKG (30)
1oz EKG (5)
1oz EKG (Dry hop)
Oak chips soaked in Bourbon added in secondary
WLP023 Burton Ale or WLP004 British Ale
Mash @ 154 for 60 minutes
OG: 1.071 at 75% efficiency
