Add 70 gravity points of sugar. (Approximately 10 lbs) to get your SG around 1.100. Which will get your ABV around 14%. I would go with either Montrachet Red Star Premier Classique (Montrachet) Or Premier Rouge Red Star Premier Rouge Although D47 would also be fine. Follow TOSNA 3.0 for your yeast nutrients. I would rack off the gross lees after no more than 2 weeks. (Maybe sooner). Plan to age 6 months or so. Stabilize with sulfates and backsweeten to taste.
