What yeast for a sweet BlackBerry wine. And a recipe for making 5 gallon from concentrate.

That'll get you 1.028 sg, but all of your flavor. Add 70 gravity points of sugar. (Approximately 10 lbs) to get your SG around 1.100. Which will get your ABV around 14%.

I would go with either Montrachet Red Star Premier Classique (Montrachet)

Or Premier Rouge Red Star Premier Rouge

Although D47 would also be fine.

Follow TOSNA 3.0 for your yeast nutrients.

I would rack off the gross lees after no more than 2 weeks. (Maybe sooner).

Plan to age 6 months or so.

Stabilize with sulfates and backsweeten to taste.
