so ive made three different ipas with different hops and all taste nice a bitter before bottling. After secondary they have a sweet nose/finish. It’s not a bad flavor but not traditional ipa and something just odd about it.

I’m fermenting with the ambient temp in the chest hovering around 65. I have left all three for 3 weeks. Is it possibly the pruning sugar or am I doing something during the brewing process that is causing this.
 
It's really hard sometimes to judge a beer before kegging or bottling. The carbonation, settling, and that few days or weeks of aging tend to really change things.

It could be a lot of things. A few thoughts that pop into my mind are: (1) The yeast versus the ferment temp. You are on the low end of temps for many yeasts. (2) Mash temp if you are doing all grain. Higher mash temp = sweater heavier less fermentable, lower temp = dryer cleaner more fermentable. (2) The yeast itself. Each different yeast gives a different flavor profile. (3) The extract if not all grain. Maybe try a different one. (4) The recipe. You might be using ingredients that are simply sweeter by design.

Post up your recipe and process, maybe we can all jump in and help zero in on it.
 
No reason to secondary an IPA. No, priming sugar, which ferments out to provide your carbonation, is not going to make your beer sweeter.
