Delicious and dirt simple. I made roti to go with it too.

1/3C butter (unsalted)
salt to taste
half onion minced
2 tblsp flour
2 tblsp curry powder
pinch saffron
chili to taste (I like 2 tblsps)
1 cup milk
1 cup chicken broth (Or use beef, but don't tell anyone ;) )

over med heat melt butter, cook onion (don't brown ~5mins).
add flour and stir constantly for 4-5 mins to make a *roux*
Add curry powder, saffron, chili. stir.
slowly stir in milk and broth.
bring to boil, then simmer.

Easy and delicious. Serve with rice, grilled meat, whatever.
 
When you say, "Chili" do you mean chili powder? Or chili, like with beans, etc.?

crushed red pepper flakes. Anything you like for spicyness.

I've also found that there are excellent curry pastes that can be had at world market or some better grocery stores. Add that to an onion, 6 cloves of garlic, a bell pepper, and 2lbs of chicken. Simply awesome. SWMBO can't understand why I can make it every week and not get tired of it :)

Sounds like hell of a lot for 2 cups of liquid.
Are you sure ists table spoons and not teaspoons?
