5 day old taco meat (house seasoning)
3 day old refried beans (from dried, beef stock, pork stock, almost burnt, AMAZING)
Sharp cheddar
Sour cream
Avacado just past prime
Onions

Oh man......I joke that I "slum" with mexican food, but gawd dammit!!!! That stuff is SO good!

I had saved au jus from steak scraps boiled for an hour or so, the juice from 2 slabs of dry rubbed baby back ribs, a little salt and pepper. I simmered the soaked beans overnight, in the soaking liquid and all the juices, but left a lid on so I wouldn't wake up to beans burning on the bottom of the pot. There was still waaaaay too much liquid the next day, so I decided to take the lid off and let them fall apart over the day. They almost burned. Got them just in time, added a little water an voila! Magic.

Of sourse I didn't make the sour cream!!!! I'm not a COW! (I did raise and milk the cow though, and I grew the barley I fed the cow, and I shaved and massaged the cow, and rubbed it with scented oils, and milked the cow, and.....soured the .....cream;))


I really did lay around in my boxers all day. I NEVER do that! I wanted to let my skin breath.

I dipped my chips while laying on the couch in a sleeping bag, watching scary movies in my boxers.
 
Man... sour cream is a cultured milk product and can be made in the home just like yogurt.

Aaannnnd I don't make it either. Actually, except for using it in cakes I don't eat it at all.

Yeahhh....I have been interested in making chees, but have never done that either.

Clabbered milk is one of the most misunderstood things we eat.

People think that sour cream and yogurt are magical things the gnomes make in caves in denmark, and that if the milk gets the slightest odor, toss it out.
