This is another beer I was able to get quite a bit of information about from the good people at Summit Brewing in Minneapolis. The recipe below has been changed slightly but is still a very representative of their flagship Summit Pale Ale.

12 lbs Hugh Bairds
1 lb CaraPils
1 lb 10 Crystal

.5 to .75 oz of Fuggles in boil
.5 Fuggles and .5 Cascade at 20
.5 Fuggles and .5 Cascade at 15

Dry hop with 1 oz Cascade and .5 Fuggle

A real nice deceptive beer. In the glass it looks like an ordinary 'lawn mower' beer. Tasting it you realize it has a great depth of malt and a very nice floral Cascade/Fuggle flavour. It pours with a tight white head.

Did the Summit guys tell you they use the Scottish Ale strain or is that just your personal preference?

Thanks!

The yeast is my preference. It is more likely they are using another neutral yeast like Sierra Nevada.
