Hello all.

I have been brewing for a little over 2 months and I've brewed 9 batches, a few extract but mostly all grain.

I am looking for suggestions on what to brew next. I really like IPAs but all popular styles are fine with me. So far I have brewed these styles and would like to try something different to give a little more variety.

Belgian Saison
Chocolate Milk Stout
Imperial IPA
American Pale Ale x 2
Pumpkin Ale
Chocolate Pumpkin Porter
Hefeweizen
French Saison

I have Jamil's book brewing classic styles and have 80 recipes to go by provided the style is in the book. I would eventually like to brew a sour ale but I need to learn more about them and I'm waiting a few months until I try lagers.
 
Even though it's finally starting to cool off, I vote for something lighter. I see a bunch of IPAs and stouts on that list. I do the same, and then mix in a pils or blonde here and there and they wind up being my favorite. There's something magical about a 4-5% quaffer you can pound on a warm day or by the grill.

Anyways, since you don't want to do a lager I vote for either a blonde or bitter.
 
Buiding on that last idea, a mild could be nice. I've not brewed Jamil's but Reaper/Orfy have a good recipe in the database here that I can vouch for and is quite popular.
 
Do a black IPA or an aletoberfest - an Oktoberfest with an ale yeast. I've had good success using 1007 and 2112 fermented in the low 60's.
 
Amber ales are great for this time of year. I have one on tap right now and I"m loving it. Still sort of hoppy but much more malty and a tad darker than a pale ale.
 
I use Beersmith to make up recipes. I look around when I have some time and create a recipe. A lot of the time I will see a recipe that sounds good and I will input it and make small changes that sound good to me. I have 28 recipes started. When a brewday comes up I look at the recipes and see what strikes my fancy at the time. If I have the ingredients I will brew the one that interests me. If not I either select another or tweak the recipe to what I have.

I brew all sorts. Right now I have a saison, an Imperial Russian Stout, a pale ale, and a Brown in the works. Probably a lager will be next. Black lager.

If your pipeline is good I would start a heavy beer for mid winter. A big stout, Winter ale or something like that which will require aging until mid winter.
 
Where do you live? It's still warm here, but it's close to Amber/Oktoberfest/Porter season. Pumpkin is always an option if you like those. Now's the time to brew it for when it starts to get cold.

If you live where it's warm, then anything will do. I brewed a mild once. Very popular recipe. I just didn't end up caring to drink it for weeks. Nothing wrong with it, just didn't get excited for it like I thought I would.

I think that would be hard for me to be that spontaneous because I usually always make a yeast starter 2-3 days out, but I have started to have two or three recipes worth of grain, hops and yeast at my house. This allows me to pick between the ones I have without taking up so much room. As many apartment home brewers I have limited space. I use Brewers friend and I have 3 folders, possible Brews, future Brews, previously brewed. I need to get more in my future brews

I live in Tennessee, it's still warm but I have a heater and freezer for fermentation chamber. I have already brewed 2 pumpkin ales in the last 1.5 months, ones a slice veggie ale and the other is a porter.

Someone suggested an Aletoberfest, which I think I'm gonna try, and I have a few more porters and a stout planned in the next few months. I'm also going to put a mild on the schedule, maybe 3-4 gallons and see how it goes. That way I'm not stuck with 5-7 gallons.
